“Back to School Ranger Cookies”

1 C. butter Crisco

1 C. chunky peanut butter

4 egg whites

1 t. vanilla

2 C. flour

1 t. baking soda

½ t. baking powder

2 C. rice crispies

1 ½ C. chopped walnuts or pecans

1 C. flaked sweet coconut

1 C. quick cooking oats

 

Mix wet ingredients and then add to dry ingredients.  Drop by rounded tablespoon ( I use a mini ice cream scoop)  onto ungreased cookie sheet.  Flatten with a fork to make criss-cross pattern.  Bake @350 deg. for 7 to 8 minutes, watching carefully not to let them burn.  Remove from oven and leave on pan for 2 minutes.  Then move to rack.
