TRUFFLES

 

1 – 8 oz. pkg. cream cheese

3 C. powdered sugar

12 squares Baker’s Semi-sweet baking chocolate, melted

1 ½ t. vanilla

 

Beat cream cheese and sugar until blended and smooth.

 

Add chocolate and vanilla…..blend well.    Refrigerate for one hour or until chilled.

 

Shape into one (1) inch balls.  Roll in walnuts, cocoa, powdered sugar or coconut.  Store in refrigerator or other very cool place.

 

 

 

 

 

 

 

 

 

 

 

HOMEMADE HOT COCOA MIX

 

2 C. powdered sugar

1 C. unsweetened cocoa

2 ½ C. powdered milk

1 t. salt

2 t. cornstarch

 

Combine all ingredients and mix well.  Put into airtight container.

 

 

 

 

 

 

 

 

 

TOM & JERRY BATTER

 

12 very cold eggs

3 C. sugar

2 C. powdered sugar

Whip egg whites until stiff.   Gradually add sugar.   It is best to beat this mixture on low speed.

 

Whip egg yolks separately until stiff.   Add powdered sugar.

 

Fold beaten egg whites into yolk mixture.

 

Put into a plastic container and keep in the freezer.  It will not get hard.

 

DIRECTIONS:

Place a scoop of batter into coffee mug.  Add one (1) ounce of brandy and one (1) ounce of rum.  Fill with boiling water until batter floats to the top.  Sprinkle with nutmeg or allspice.

 

 

 

 

 

CHOCOLATE SOUR CREAM CAKE

 

2 C. flour

1-2/3 C. sugar

2/3 C. unsweetened cocoa

1 t. vanilla

1 ¼ t. baking soda

¼ t. baking powder

2 eggs

1-1/3 C. brewed coffee, cooled

1 C. sour cream

 

Combine all ingredients.

 

Bake @350 for 45 minutes or until tester comes out clean.

 

Top with chocolate frosting or sprinkle with powdered sugar.
